This coffee is from San Ignacio, Peru, a region that has a warm, temperate climate, fertile soils and an abundance of rainfall year-round. It is considered one of the best growing regions in the country, which is not surprising because this coffee is absolutely stunning in the cup. It is a fully washed microlot coffee, light roasted, showcasing complex sweetness that lasts the full palate, sort of like honey paired with the acidity of guava, orange and cherry. Other tasting notes include rose water, cucumber, lemon-lime, baker's chocolate and toasted almond, which both highlight and balance the sweetness.
We brewed this one with a medium-fine grind in a pour over at hotter temps, 202-204F, to draw out the acidity and balanced complexity. However, it would do well across most brewing methods.
